Disney On Ice 2019

On February 2019. ~
Helsinki, Finland.
Disney On Ice- show.
Hartwall Arena.

February 2019, we were with my son Kasmir at Helsinki, Hartwall Arena. There were Disney On Ice - show. Our adventure was a gift to him, because he had his 5 year-old- birthday on that month.



Our train leaves a little before 8 `o` clock to Helsinki. When we were arrived to Helsinki we went ice skating, at  Jääpuisto. Helsinki is absolutely exciting city, and my son thinks that too.

 He has begun to practice ice ckating. And im very proud of him, beacause he was about to give up already, but then he went back to the ice and tried again. 






 Next morning we went with our friend to look at the new library Oodi. It has been opened at the December 2018. I have always loved libraries of any size and shape.




It was beautiful, inside and out.  There were an ice sculpture in front of the library. We drank coffee and ate chocolate  in the library cafe.




In the evening we went to the Hartwall Arena and there were Disney On Ice - show, that started half past six. We came early so we waited for some time before we got inside. Before the show, we went around the Arena and Kasmir ate pizza.

Kasmir liked the ice show very much, and i think it was magical. Was deffinately worth coming.  









When the show was over we went to  the grocery shopping to get some evening snack.











 Next morning, at sunday 10.2. we woke up  and ate breakfast, then we went to spend our last day in Helsinki. The weather was very grey and bad all the time on that weekend, but luckily, there wasn`t very cold. 




 I wanted to show Helsinki Cathedral and Senate Square to my son. But he thinks that snow balls and water puddles are much more interesting than church. :D But it became interested and he went to see it closer.  And i take couple of pictures of him. Of course. The statue of Aleksanteri II was more interesting and he wanted me to take pictures of him next to the statue.







Before our train leaves back we went to the Helsinki City Museum and we really enjoyed our time there. There were plenty of different shows. So much to see and do. For example, There were old bar. And there were a school And Kasmir was playing a teacher there but also got to write a booklet and be a student.







Our train leaves after six and before we got there, we went to eat hamburgers and french fries at the train station. Our trip was very nice and we had so much fun. Lot to remember for a long time. :)

Vegan Mango Cheesecake 💛

I have done many mango cheesecakes before, but not any vegan version. I found recipe at the internet but i do it my own changes. "Vegegel" is  a vegan gelatine, and i tried it now for the first time. I have made vegan cheesecakes before, but never with the "Vegegel"



Vegan Mango Cheesecake 

250g oat biscuits 
200g margarine 

Filling:

2 can soy whisp 
2 Oatly påMackan
1 dl sugar
Coconut milk ½ dl 
Mango mash 1 dl
3  Vegegel

Glance:

1 dl Mango mash 
fruit juice
1 Vegegel

Decoration:

 cape gooseberries.





Melt the margarine. Crush the bisuits and pour the melted margarine on the biscuits. Pour biscuit-margarine-mix on the cake tin and the cake tin in the fridge. 

Whisk the soy cream and add the oatly påMackan. Warm coconut milk and add the mango mash.Or made mango cubes which i pureed myself. Drop of fruit juice, and add 3 bags of Vegegel. Mix well. Add coconut milk in the whipped soy cream, mix, and pour it to the cake tin. Put it to the refrigerator for an 1 hour. 

Then the glance on top of the cake. Warm mango puree, add drop of fruit juice. Mix and add 1 Vegegel. pour it over the cheesecake and put back to refrigerator. When cake is ready decorate it with cape gooseberries. =)

Coca-Cola and Christmas Shopping

At December 2018 Kasmir got to see a Christmas truck, at the Keskinen store, Tuuri, Finland. The event was free, and you get free coca-cola from the truck. Kasmir was photographed front of the truck and the picture turned at the postcard and the image could later be downloaded from the web.




Keskinen at Tuuri Finland, is a place that you want to go back shopping again and again. Even if you had been there many times before. There so much to see and it`s not feels like its a basic visit to grocery store when you go there. And for the christmas season there is a white winter magic land that glows blue.

We left there by train at the morning. The train journey does not take long, couple of hours. in Seinäjoki you have to change to another train. The second train journey takes about 40 minutes. Train stops right next to a Keskinen. My sister and his boyfriend came to pick us by car.





Kasmir didn`t want to walk. :D









Not so interested at shopping. :D

Espresso- Dark Chocolate Cheesecake (Vegan) 🖤

This was super delicious cake. Vegan cheesecake with dark chocolate and espresso. Absolutely my favourite, especially because of strong coffee and chocolate. I ate this straight from the fridge. :D This is deffinately worth to try! This recipe is from finnish magazine (Kodin Kuvalehti) Vegan Chocolate cake- named recipe but i do my own changes on it.






Vegan Espresso- Chocolate Cake 

250g vegan chocolate biscuits 
100g margarine
Espresso Coffee Powder 

Filling:

1 dl Espresso 
250g Dark Vegan Chocolate
Oat Milk
2 can soy cream/ oat cream 
2 box vegan fresh cheese
3/4 dl Sugar 
1-2 tl Vanilla Sugar 



Chocolate Topping:

2 little can soy cream / oat cream 
100g Vegan Dark Chocolate 
Coffee Powder 

Decorate at Nuts and Cape Gooseberries. 



Crush the biscuits. Put melted butter and coffee powder into bowl with biscuits. Mix it until it smooth mixture. Pour it to the cake tin, and put cake tin in the refrigerator. Make the filling.

Make espresso coffee. Whisk the cream and add the "fresh cheese" Melt chocolate at espresso. Add it at soy whipped cream and add the sugars. Put cake in the refrigerator for couple of hours.


Make ganache on top of iced cake. Pour sthe soy cream into a kettel and melt the chocolate in it. . Decorate with nuts and cape gooseberries. Only imagination is limited, but if you want to keep the cake completely vegan, make sure the chocolates and everything you use is vegan.

Kasmir`s 4 year old Football Bitrhday Parties

Kasmir turned 4-year old and we had birthday parties (of course) with football theme. At monday 12. My school started and Kasmir went to kindergarten for the first time in his life. So far we have only been home (except our hobbies) so it was a big change for both of us. Following week (for starting school and kindergarten) at wednesday Kasmir had birthday and he turned 4 year old. We had parties on weekend. Saturday and sunday.





I made football - shaped cake, dark chocolate- raspberry - yohgurt cheesecake- Ham pie and vegetarian version on it. Football - cake was Charlotte Russe, filled with peach quark and covered on white sugar fondant and black stars. The purpose was to make the stars pentagonal, but it was too difficult to me, so i decide to make a own-looking football cake. :D




Cheesecake has three layers. Bottom was chocolate oat biscuits. First löayer was chocolate second white chocolate- raspberry yoghurt topped with dark chocolate ganache and raspberry crumb.

Dark Chocolate - Raspberry - Yoghurt Cheesecake 

150g chocolate oat biscuits
50g butter 

First layer:

200g dark chocolate 
200g milk chocolate
200g chocolate fresh cheese
2,5 dl cream
sugar
3 gelatine

Second layer:

200g white chocolate 
200g vanilla fresh cheese
150g raspberry youghurt 
2,5 dl cream 
3 gelatine 

Topping:

2 dl cream
Dark Chocolate 150g
raspberry crushed grain 


Melt the butter and crush the biscuits. Pour into biscuits and mix it smooth. Pour it to the cake tin and  cake tin in the refrigerator. Make the first filling. Melt chocolate in the microvave oven But carefully, that the doesn`t burn. Whisk the cream into foam. Add chocolate cheese and melted chocolate on the cream. put gelatine soak in the cold water. Warm a drop  almond milk . Add sugar if you like. Squeeze gelatine and add them into warm almond milk. Add the gelatine mixture into the whipped cream and mix. Put cake in the refrigerator for couple of hours. 

Make the second layer. melt chocolate. Put gelatines in the cold water.Whisk the cream, add youghurt and the "fresh cheese" Warm almond milk and squeeze the extra water out of the gelatines. Add them into the almond milk and then in the whipped cream. Add it on the first cake lauer and then put it on the refrigerator. Best if you can keep it voer the night and make the ganache then.

Make ganache topping. Warm cream at the kettle and melt chocolate on it. Pour the sauce over the cake and decorate with raspberry crushed grain. 




I also made a ham pie and vegetarian version with soy. We celebrated on sunday, but few visited also on saturday. Happy Birthday kasmir 4 Year ! <3
