Papa Arrugadas Canarian potatoes

I made today at dinner Canarian potatoes, Papa Arrugadas  and we remembered a little our trip to Las Palmas this year.

I use new potatoes on this. Potatoes in Las Palmas were small-sized too. We also made Mojo verde - sauce too which includes the Canarian potatoes.

Papa Arrugadas - Canarian potatoes

( 4 Portions ) 

1 kg potatoes
200g coarse seasalt



1. Wash the potatoes well, but do not peel them. Put the potatoes in a large saucepan and water just enough to cover the potatoes.

2. Add salt to the pan and cover with a clean kitchen towel.

3. Let the potatoes boil until fully cooked. The water evaporates almost completely, but the water must not be added at any stage.

4. Take the cloth off. Sprinkle some more salt over the ripe potatoes. Bring to a further boil on low heat until the potato peel is wrinkled and dry. Serve ready-made potatoes with sauces or meat.

Mojo verde - sauce at Canarian potatoes

1 garlic 
1 bundle parsley 
2,5 dl olive oil 
drop of white vinegar
1 teaspoon cumin
Sea salt

1 . Crush the garlic, herbs, salt and cumin into a smooth paste. 

2. Continue crushing and gradually add to the mixture, stirring the white wine vinegar and olive oil.
