Valentines Day 2021

Valentine’s Day this year was Sunday. I have made it a habit to invite people  to have coffee and bake some cakes or something.. My dear friend Jenna went to coffee in the morning with a flower and a card. Our mothers later on that day.

Jenna gave me flowers 💓

I like this time of year when it starts to get brighter and longer days and the promise of summer and warmer weather starts to show. At least there has been a decent, real winter this year.

Valentine's Day was this uear same time as Shrove Sunday, so i made pastries which were at the same time buns. Inside the chocolate hearts was a raspberry foam, topped with heart-shaped nonpareil decorations. Usually if I bake chocolate baked goods, I use dark chocolate powder suitable for baking. I now used cold-pressed raw cocoa powder in these pastries. I asked my mother to make a few buns made of oat milk.. My Mom arrived with a bag of buns. I put a recipe in these buns for this update too!

Love Pastries

Ingredients:

4 egg

1,5 decilitre sugar

4 decilitre wheat flour

1 decilitre raw cocoa powder

100g butter

2 teaspoon baking powder

Filling:

5 decilitre whipped cream

100 gram raspberries

200 gram cream cheese

200 gram berrie quark

Whisk eggs and sugar until foamy. In a second bowl, mix all the dry ingredients.

Melt the butter in a microwave and pour the melted butter into the flour, add to the whipped egg-sugar foam, mix them but not whisking. Pour the foam into greased, heart-shaped pans.

Bake in a 200 degree oven on medium level for about 25 min. . Undo and cool.

Make the filling. Whip the cream , add the cream cheese and berrie quark. Whisk to a foam and mix raspberries there.

Cut the hearts in half. Put the fillin foam between chocholate hearts. I thought first to decorate some heart-themed tops, icing os something, but that was the best. A simple little cake with a few nonpareil decorations. 😍

Buns made by my mum.

Oatmilk Buns

0,5 litre oat milk

50 gram leaven

1 egg

1,5 teaspoon salt

2 decilitre sugar

1 tablespoon cardamom

900 gram wheat flour

200 g butter

Heat up the oat milk, and when it`s cooled enough, add the egg. Also crumble the yeast, salt and cardamom. Pour the batter into a batter machine or knead by hand.

Alternately add flour and melted butter until dough is proper. Add more sugar to the dough. Knead for a while. Then let the dough rise for 1/2 hour. Bake the dough in round buns.

Place the prepared buns on a baking sheet, grease with egg and sugar on top. Bake the buns at 220 degrees for about 10 minutes!
