Espresso- Dark Chocolate Cheesecake (Vegan) 🖤

This was super delicious cake. Vegan cheesecake with dark chocolate and espresso. Absolutely my favourite, especially because of strong coffee and chocolate. I ate this straight from the fridge. :D This is deffinately worth to try! This recipe is from finnish magazine (Kodin Kuvalehti) Vegan Chocolate cake- named recipe but i do my own changes on it.






Vegan Espresso- Chocolate Cake 

250g vegan chocolate biscuits 
100g margarine
Espresso Coffee Powder 

Filling:

1 dl Espresso 
250g Dark Vegan Chocolate
Oat Milk
2 can soy cream/ oat cream 
2 box vegan fresh cheese
3/4 dl Sugar 
1-2 tl Vanilla Sugar 



Chocolate Topping:

2 little can soy cream / oat cream 
100g Vegan Dark Chocolate 
Coffee Powder 

Decorate at Nuts and Cape Gooseberries. 



Crush the biscuits. Put melted butter and coffee powder into bowl with biscuits. Mix it until it smooth mixture. Pour it to the cake tin, and put cake tin in the refrigerator. Make the filling.

Make espresso coffee. Whisk the cream and add the "fresh cheese" Melt chocolate at espresso. Add it at soy whipped cream and add the sugars. Put cake in the refrigerator for couple of hours.


Make ganache on top of iced cake. Pour sthe soy cream into a kettel and melt the chocolate in it. . Decorate with nuts and cape gooseberries. Only imagination is limited, but if you want to keep the cake completely vegan, make sure the chocolates and everything you use is vegan.

Kasmir`s 4 year old Football Bitrhday Parties

Kasmir turned 4-year old and we had birthday parties (of course) with football theme. At monday 12. My school started and Kasmir went to kindergarten for the first time in his life. So far we have only been home (except our hobbies) so it was a big change for both of us. Following week (for starting school and kindergarten) at wednesday Kasmir had birthday and he turned 4 year old. We had parties on weekend. Saturday and sunday.





I made football - shaped cake, dark chocolate- raspberry - yohgurt cheesecake- Ham pie and vegetarian version on it. Football - cake was Charlotte Russe, filled with peach quark and covered on white sugar fondant and black stars. The purpose was to make the stars pentagonal, but it was too difficult to me, so i decide to make a own-looking football cake. :D




Cheesecake has three layers. Bottom was chocolate oat biscuits. First löayer was chocolate second white chocolate- raspberry yoghurt topped with dark chocolate ganache and raspberry crumb.

Dark Chocolate - Raspberry - Yoghurt Cheesecake 

150g chocolate oat biscuits
50g butter 

First layer:

200g dark chocolate 
200g milk chocolate
200g chocolate fresh cheese
2,5 dl cream
sugar
3 gelatine

Second layer:

200g white chocolate 
200g vanilla fresh cheese
150g raspberry youghurt 
2,5 dl cream 
3 gelatine 

Topping:

2 dl cream
Dark Chocolate 150g
raspberry crushed grain 


Melt the butter and crush the biscuits. Pour into biscuits and mix it smooth. Pour it to the cake tin and  cake tin in the refrigerator. Make the first filling. Melt chocolate in the microvave oven But carefully, that the doesn`t burn. Whisk the cream into foam. Add chocolate cheese and melted chocolate on the cream. put gelatine soak in the cold water. Warm a drop  almond milk . Add sugar if you like. Squeeze gelatine and add them into warm almond milk. Add the gelatine mixture into the whipped cream and mix. Put cake in the refrigerator for couple of hours. 

Make the second layer. melt chocolate. Put gelatines in the cold water.Whisk the cream, add youghurt and the "fresh cheese" Warm almond milk and squeeze the extra water out of the gelatines. Add them into the almond milk and then in the whipped cream. Add it on the first cake lauer and then put it on the refrigerator. Best if you can keep it voer the night and make the ganache then.

Make ganache topping. Warm cream at the kettle and melt chocolate on it. Pour the sauce over the cake and decorate with raspberry crushed grain. 




I also made a ham pie and vegetarian version with soy. We celebrated on sunday, but few visited also on saturday. Happy Birthday kasmir 4 Year ! <3

Chocolate - Gingerbread - Little Cheesecakes

I found at the store the most cutest cake tins ever. They were heart- shaped and small. Right when i saw them i was thinking of making some small cheesecakes for them. They were cute little hearts when they were ready, and they were delicious. I could easily eat 10 those. (okey, maybe not. :D)






Vegan Little Chocolate - Gingerbread Cheesecakes

100g Gingerbreads 
100g Margarine

Filling:

4 Alpro Dark Chocolate chocolate vegan pudding
1 can Oatly påMackan
2 can soy whipped cream
2 can oat cream
200 g vegan milk chocolate
crushed gingerbread 

Chocolate topping:

2 dl soy cream 
150 g Vegan Chocolate 

 Decorate cakes with vegan heart- shaped gingerbreads <3 



Melt butter and pour it to the gingerbreads. Crush the gingerbreads. Pour butter- gingerbread mix in the cake tin and put them in the fridge. Make the filling. Whisk soy cream and oat cream an add the påMackan Melt the chocolate in the microvawe oven. Check the chocolate occasionally so it will not burn. Add chocolate soy pudding in the soy cream- oat cream - foam.  I did it so that i took one cheesecake filling on the bowl and i always added one pudding to it. Add crushed gingerbreads to filling if you want. Fill the tins and put them in the refrigerator to congeal. 2-3 hours is good time. 


Last, make dripping the chocolate icing on the cakes what comes over the cakes. Poir soy cream in the kettle. Melt chocolates on it. Do not boil the cream, only warm it up so taht the chocolate melts quickly and well. Stir it. Pour the cooled mixture  carefully over the cheesecakes. Put heart-shaped gingerbread top of the cakes and put them in the fridge. 

 This cakes are absolutely delicious! Worth to try! <3

Date Sorbet Cake (Vegan)



This sorbet cake was super delicious. It was fresh, lovely and different. Especially i liked whole cashew nuts in the filling. Cake was healthy but delicious. Sometimes its very nice to make something delicious cakes that aren`t  that sugary. I got vegetarian food magazine from my mother and this cakes recipe was there. I made my own changes on that, for example that red topping and  whole cashew nuts at the filling. If you keep cake at room temperature or a fridge for a long time it may melt. Cake supposed to be "frozen" so you have to keep it at freezer between meals.




Vegan Date Sorbet Cake

200 g soft, pitted dates
1 bag pecan

Filling:

2 can soy whipped cream
1 can oatly påMackan
1 bag cashewnuts
2 Alpro Soya strawberry youghurt
maple syrup
lemon juice 


Mix dates, pecan and coffee in a bowl. Press the mixture bottom of the cake tin. put the cake tin in the fridge and make the filling. 

Pour cashew nuts in the bowl, pour over hot boiled water. Let them soak about an hour.(I did not soak them that long, 15 minutes tops.) Foam the soy cream and put the påMackan, soaked nuts and soy joghurts on there. Put there maple syrup and lemon juice if you want. Mix the ingredients andput it on the fridge for an 4  hour. Decorate cake with red berries. I melted frozen berries and spread it over the cake. This was wonderful cake <3

Ever Since i was a child, i have taken pictures of people, beautiful places and things. My dad gave me then my first camera I took pictures on that camera everywhere i go. The best part was develop the pictures that i had took on my camera. I browse them over and over again.




That park looks like some kind of fairy world.


Theres a place where kids can play and you can sit and enjoy the nature  <3

KASMIR 3 year old Birthday Parties

We had Kasmir`s 3 Year Old Birthday Parties at indoor playground. You can celebrate birthdays there and order ice cream and delicious candies and everything on there. Kasmir was very excited about candy, and ice cream and be surrounded by nice people.

At the weekend, friends and relatives who didn`t attend to come in the main party himself. I bake a cake. It was a chocolate cake. I decorated it with many colourful candies and  green grapes. I also made a liquorice - salty pepper cheesecake, and decorated the cake with salty pepper ganache and  crushed salty pepper candies and raspberries. And there were chocolate muffins. Chocolate muffins with chocolate decorating. there were potato chips and Karelian pies. I did not make them myself, i bought them at the market.

Kasmir 2 year old Pirate Birthday

When Kasmir turned 2 years old, we had a pirate-themed birthday party. The floors of our apartment were filled with black skull balloons and there was a big pirate flag on the wall. My sister and Kasmir`s godmother did it. Couple of weeks before parties, Catharina and Kasmir made invitation cards together. They were small treasure maps.

Both of us, me and Kasmir, were dressep as pirates. I had long black and white striped dress and purple tights with stars on it. I bought a heart-shaped eyepatch. Kasmir had a white shirt and a black vest with a pirate badge. Kasmir had black and white striped pants and a black eyepatch with a white skull. There was also a telescope and a skull shoes. They were a gift.

We celebrated partties at saturday and sunday. We had so many guests again. I made a treasure chest cake. It had a skull decoration on top of the cake and treasures in the inside. "Treasures" were chocolate coins, candy necklaces, and colourful  different candies) I  put flour on top of the cake. So it looked old and dusty. It was chocolate cake with a two different fillings, peach and chocolate- banana. 

My mum made also a big cake on parties and we decorated on pirate sails. :D they look funny. They had left of our craftings couple of weeks ago, and we decided to put them decorations, so the cake looked like a pirate ship.
