I use new potatoes on this. Potatoes in Las Palmas were small-sized too. We also made Mojo verde - sauce too which includes the Canarian potatoes.

Papa Arrugadas - Canarian potatoes
( 4 Portions )
1 kg potatoes
200g coarse seasalt
1. Wash the potatoes well, but do not peel them. Put the potatoes in a large saucepan and water just enough to cover the potatoes.
3. Let the potatoes boil until fully cooked. The water evaporates almost completely, but the water must not be added at any stage.
( We had tofu sausages)
Mojo verde - sauce at Canarian potatoes
1 garlic
1 bundle parsley
2,5 dl olive oil
drop of white vinegar
1 teaspoon cumin
Sea salt
1 . Crush the garlic, herbs, salt and cumin into a smooth paste.
2. Continue crushing and gradually add to the mixture, stirring the white wine vinegar and olive oil.
